Alot of the Gundam series in the nineties seem to use European styled buildings in their colonies as well as European styled military uniforms(ie, F91(Where it is actually a plot point),V, Gundam Wing, Gundam X and to a lesser degree ZZ,CCA and 0080).
Is their an interview anywhere that says why the creators decided to go with this, is it symbolic, or is it Because LOGH was so popular?

Even for Japan, LOGH is pretty niche, so I doubt it was ever "popular" enough to be influencing something as mainstream as Gundam. Besides, European colony architecture first pops up in Zeta, which predates the LOGH anime adaptation by several years.

It's a backstory plot point in Gundam Wing as well, where the world is basically run by the European aristocracy.

It is more like they decided to make the show more international.
You can see that in MSG, while being in a space age and a global governmental state, you still get disproportionally large group of people with names resembling Japanese, at their family names being Japanese.
Having mostly modern buildings doesn't help the image much because most modern cities look like that.
Adding older, stylish European buildings and uniforms can make those places and organizations look more international in the eyes of Japanese viewers at the very least, if not foreign ones.
Also, since Gundam shows almost never fought in Japan, it is understandable why you don't see older Japanese buildings, they are mostly wood and you don't really want to build castle keeps out of wood anymore.

Also, a lot of Super Robot anime battles are fought in Japanese settings too.
Gundam not doing it isn't that big of a deal and Gundam works also take place in a much bigger scale rather than just 1 country. That also applies to a lot of real robot shows too.
